Help!

Calling all sister-in-laws, mother-in-laws, friends, sisters.... ANYONE! We have a party to go to tomorrow for Michael's squad. I am supposed to bring a side dish... BUT I am totally bored with my same old same old recipes.
If you have any great side dish recipes... PLEASE send them on over. I know so many of you are great cooks and very creative so I am very excited to see what you can come up with.

Here's a super easy carrot side dish:

Balsamic Glazed Carrots

Ingredients

* 3 cups baby carrots
* 1 tablespoon olive oil
* 1 1/2 tablespoons balsamic vinegar
* 1 tablespoon brown sugar

Directions

1. Heat oil in a skillet over medium-high heat. Saute carrots in oil for about 10 minutes, or until tender. Stir in balsamic vinegar and brown sugar, mix to coat and serve.

Love this...
peel and dice mangos into bite size pieces
peel and cut jicima into bite size pieces
If you like toss in some avocado in bite size pieces.
Toss in a handful of chopped cilantro
Squeeze lime juice over the whole thing.
Good, low cal, tasty!
